The composition of fatty and steric acids of the seeds of mulberry fruits Morus L. was also studied: polymorphic species <italic>Morus alba</italic> (white-fruited, pink-fruited, black-fruited) and <italic>Morus nigra</italic> (Khartut variety). As a result of the studies, 12 fatty acids were identified. The main ones were linoleic acid, palmitic oleic acid, and stearic acid. The predominant fatty acid in all samples was linoleic, which varied from 67.5 to 79.0%. 15 sterols were found, among which β-Sitosterol accounts for about 90%. Determination of the total antioxidant content of <italic>Morus alba</italic> seeds (white-fruited, pink-fruited, black-fruited forms) and <italic>Morus nigra</italic> (Khartut variety) revealed the accumulation of antioxidants in all samples. The highest total content of antioxidants was observed in <italic>Morus nigra</italic> (4.40 mg/g) and the white-fruited form of <italic>Morus alba</italic> (5.56 mg/g).</p></abstract><trans-abstract xml:lang="ru"><p>В настоящей работе впервые представлены результаты изучения суммарного содержания антиоксидантов в семенах <italic>Morus</italic> L. А также изучили состав жирных и стериновых кислот семян плодов шелковицы <italic>Morus</italic> L.: полиморфного вида Morus alba (белоплодная, розовоплодная, черноплодная) и Morus nigra (сорт Хартут). В результате исследований идентифицировано 12 жирных кислот, основными из которых были линолевая, пальмитиновая олеиновая и стеариновая кислоты. Преобладающей жирной кислотой во всех образцах являлась линолевая, пределы которой варьировали 67.5–79.0%. Стеринов было обнаружено 15, при этом на долю β-Ситостерина приходится около 90%. Определение суммарного содержания антиоксидантов семян <italic>M. alba </italic>(белоплодная, розовоплодная, черноплодная формы) и <italic>M. nigra </italic>(сорт Хартут) выявило накопление антиоксидантов во всех образцах.
